Chopping Block Provisions was founded in 2010 by master butcher James Wilson, who had a vision to bring back the traditional craft of butchery to the local community. After years of working in large commercial meat processing facilities, James was determined to create a place where quality, craftsmanship, and personal service were the priorities.

What began as a small counter with just two employees has grown into a beloved local institution, serving hundreds of families each week with the finest quality meats and personalized service that larger stores simply can't match.

Our Sourcing Practices

We believe that exceptional meat begins with exceptional sourcing. That's why we've built strong relationships with local farmers who share our commitment to quality, animal welfare, and sustainable practices.

All of our beef comes from grass-fed, pasture-raised cattle from farms within 100 miles of our shop. Our pork is sourced from heritage breed pigs raised without antibiotics or growth hormones, with access to outdoor areas where they can express their natural behaviors.

Our poultry is free-range and fed a vegetarian diet without antibiotics. We personally visit each farm we work with to ensure their practices align with our standards for animal welfare and environmental stewardship.

By sourcing locally, we not only ensure the freshest possible products but also reduce our carbon footprint while supporting our regional agricultural economy.
